The classic New Orleans cocktail, which is saying something for a city with such a storied drinking history. Basically a Big Easy version of an old fashioned, absinthe lends an air of danger that is most welcome. Our version includes Sazerac Rye, St George Absinthe Verte, Liber & Co Gum Syrup, Peychaud's Aromatic B

This lush and herbaceous cocktail takes the High Seas rum blend from the Transcontinental Rum Line and bolsters it with Arhumatic Lemon, Thyme, and Ginger, an in-bottle infusion of Guadeloupe agricole rum. It's then mixed Manhattan/Martini style with Mulassano's lightly sweet and herbal Bianco Vermouth and alpine bitters from Scrappy's. Served up, it's both elegant and boldly flavored.

We admit that the first thing we thought when we first tried high proof Rivers rum wasn't Let's make a Negroni variation. But we're glad our friend Kate Perry from La Maison & Velier did, because this is an oddball victory, with the funky cane juice rum playing perfectly somehow with the rich burnt caramel of Averna, red vermouth, and both chocolate and black lemon bitters. Also includes a sachet of fresh nutmeg to grate over top.

Japanese highballs are a fascinating corner of the cocktail world, in which intense devotion to precision is applied to something seemingly simple to stunning affect. This drink is a little less austere than the whisky based classic that holds sway in Japan, but it was about time that that tropicalize everything trend came for it anyway. Haitian Clairin makes bedfellows of passionfruit, vanilla, orange, and bittersweet tonic water. Just find us a subterranean bar in a neon soaked business district somewhere and we'll be there crushing 4 or 5 of these.

The bitter cocktail breakout star of 2023 gets a N/A makeover for 2024, the year of responsible, sober choices (maybe?). Lyre's Classico non-alcoholic sparkling wine alternative forms the base, with Free Spirits' Spirit of Milano and Lyre's Aperitif Rosso adding the bitter and vinous qualities.
At the foot of volcanic Mount Pelée, where the forest meets the sea, lies the small settlement of Macouba. There you'll find little to speak of aside from the Distillerie Fonds-Préville, perhaps the most picturesque distillery on the island of Martinique, and the home of Rhum JM, producer of fresh cane juice rum. We've paired their Cacao Forastero Bitters, made with cacao grown just one town over, with the Épices Créole rum from their cocktail-centric L'atelier des Rhums series. Aged for 3 years in toasted French and American oak, with spiced flavors of vanilla bean, gingerbread, honey, pepper, nutmeg, and cinnamon. It seemed fitting to give this drink a name evoking its beautiful home, and we can't help imagining we are there ourselves when we take a sip.

*Note that the Cacao Forastero Bitters feature peanuts as an ingredient.

Peychauds brings to mind licorice, saffron, citrus, peel, and caramel. Its lighter and fruitier and less bitter than the profile of other aromatic bitters. The Sazerac, the drink most associated with Peychauds bitters, was likewise born in New Orleans and was an homage to Antoines brandy toddy. It became the signature cocktail at the Sazerac Coffee House, a development that helped to cement its historic name.
